Pumpkin Butter Cupcakes

I couldn't resist it was finally time to bake something with Pumpkin in it. So I ventured out today to try something new. Something I created in my own head and I must say it turned out pretty tasty! It's what we call semi homemade! So if you are so inclined to do so I ask you to try them out as well.

Pumpkin Butter Cupcakes

makes 12 cupcakes

ingredients:
1 1/4 cup all purpose flour
1 cup sugar
1/2 cup (1 stick) butter
2 large eggs
1 tsp Vanilla extract
1 tsp baking powder
1/8 tsp salt
1/4 tsp nutmeg
1/4 tsp all spice
1 tbsp Cinnamon
2 tbsp Pumpkin Pie Spice
1/2 cup milk

In a small mixing bowl mix together the following ingredients: Flour, baking powder, salt, nutmeg, cinnamon, pumpkin pie spice. Set this aside.

In another mixing bowl cream together the butter and sugar (about 2 min) then mix in each egg and the vanilla. Once all is blended well slowly mix in the dry mixture in 3 segments. When the wet and dry ingredients have been blended add the milk and continue to blend for another min. Spoon mixture into a muffin pan with cupcake liners.

Bake at 350 for 22-25 minutes. Allow them to cool and then cover them with milk chocolate and or cream cheese frosting. Top off with a candy corn.

Yours, Mine, Our.. crazy life

Hello from the Pingel household.. yes we still exist! Although we thought life would finally calm down after the wedding and honeymoon it has instead stayed at a very steady rapid pace. Work for me has been a wonderful transition that has reduced stressed but with a new job comes lots of training. So I feel like my feet barely have time to touch the ground before I am taking off to another city for some more work and training.
John is about to embark on the same scenario as he gears up for a new job as well. He will be spending a good chunk of time in New York City for his training. Although life may be crazy with travel schedules and finding the availability to just talk to one another can be difficult, we are so truly blessed by what God has provided. We have learned not to take our jobs for granted and that this crazy storm of life shall pass too. I cannot wait for mid October to come around where we will finally be in the same city and at home together and the weather will hopefully start cooling off in AZ.
On yet another positive note... FOOTBALL has started! We are a house that loves us some football.. Although at times we may disagree on teams. I think right now that has been our main topic of discussion.. Who are you playing in your fantasy league this week? Did you see Romo botch another snap! The start of football season is such a wonderful feeling for me. It is a reminder that fall is coming, a reminder that we will be seeing family again soon during the holidays, a reminder that I can now begin planning for our annual Christmas party and a reminder that my Christmas tree can go up in about 8 weeks. YESSSS!

So whats next on our plate?? We just left Texas where we spent a long weekend with John's family celebrating the wedding of his Cousin Josh and his new wife Christina. We had a blast and the wedding so beautiful. Officially weddings are done on this side of the family and now we move on to enjoying life together. I am currently in Florida learning more and more about distributors and will get to return home on Friday but then I will take off again to Boston next week (where I will actually get to put on a jacket!) After that John is off to NYC for his training and then I will head off to Texas to see my parents, go to a sales meeting for work and then head to Dallas to see Mylah for her Birthday!

It's all changing..


New name, new house, new job, new life... with all of these changes I thought maybe we would venture and do a new blog as well!
Here are the changes that have occurred:
On April 22 I signed my life away as we purchased our first home.

Then came demolition time. We spent sleepless nights ripping off wallpaper, chiseling away tile, pulling up carpet and re-painting.
On May 12 our new house started to become a home as I packed up my single girl townhome and he purged packed up his bachelor pad.

Then May 14 I headed to Texas, first to get some RnR and then to start celebrating.. celebrating what you ask... Well May 20... Tara Garcia became Tara Pingel.
Then we decided to be little jet setters and head to the Dominican Republic to shut out the rest of the world and relax... After the previous few weeks we had this rest was very much welcomed. We spent countless hours on the beach, reading, sleeping and eating!
We arrived back home memorial day weekend and started the daunting task of unpacking the hundreds of boxes that were sitting in our garage. After some blood sweat and tears we pretty much have everything unpacked!

Then on June 1 I started my new job as a Territory Rep for Dart Containers. It has been a wonderful change of pace for me and this position could not have come at a better time.

That leads us to NOW... Life.. So we begin... Life According to Us!
